From our dinner to you: crispy eggplants and other stuff.

For dinner, we had breaded chicken breasts and crispy eggplants.
I have two tips about them, and while I consider them interesting, you may or may not.
I hope you do ;)
First, something my Mom taught me on how to remove the poultry taste  from, you know, the chicken.
I am not a great meat eater, and it happens sometimes ( often )  that  meat has a weird taste to me.
So, here we are, to eliminate unwanted odors or taste from  meat,  let it "marinate" for at least 10 minutes in a solution of  water and baking soda ( one or two teaspoons of BS ).
Then you rinse well and voilĂ , the smell/ taste is gone.
Believe me (try it) it works.

The second tip is on how to obtain crispy eggplants, that are equal if not superior to French fries, in deliciousness.
- remove part of the skin of a big eggplant.

- dice it.

- in a big bowl add some multipurpose flour to the dices, and coat them well, mixing all up.

- in a non sticky pan, pour some EVOO, toss in the eggplant dices and stir well to coat them with oil.
- note that they are not deep fried :D

-add a pinch of salt.
-on a medium to high  fire, stir the eggplants continuously, until tender, and until a nice brown crust covers them.

-enjoy while warm, the hotter is better but care your tongue.

Squared stubborness.

Today I was mopping the floor ( you see, I mop sometimes ;) and my 4 yo boy was playing, sitting on the floor.
I asked him, gently to move to another room, he refused, I insisted, nothing.
So I proceeded to mop, all around him! bah!
Stubborn the two of us.

I'd never thought: French fries with fruit sauce.

Let me explain, today I made some Fruits of the forest compote, actually it was more a sauce.
It was a bit tart, and it was a bit too much, so this evening, while eating my French fries I though to dip them in the sauce.
They were so yummy!
A sweet 'n sour fruity version of ketchup.
I didn't take a photo because of the light... you know, not because they were over immediately.

The making of Avatar.

I'm not the one who runs to the cinema when a movie is coming out, in fact I saw Avatar today.
I fell in love with the characters and, even though it reminded me of things already seen, and despite it's violence, it's beautiful.
After seeing it, I wanted to know how it was made so I found this video that I like to share with you.

Black bread pizza.

I called it black bread pizza, because I used a black bread flour mix that is really tasty and delicious, but you can use in alternative, whole wheat flour or a mix that you already like.
Black bread mix ingredients are: wheat flour, rye flour, sesame seeds, barley meal, oatmeal, cornmeal, rice flakes, sunflower seeds, sourdough of dried wheat flour type 0, brown sugar, salt, dextrose, malted wheat flour, amylase.

I used:

18 oz ( 500 gr. circa ) black bread mix
3 oz ( 100 gr. circa ) wheat flour
2 tsp salt

1 tbs sugar
2 1/2 glass water circa
0,35 oz ( 10 gr. ) dry yeast

2 mozzarella cheese
1 zucchini
1 bell pepper
extra virgin olive oil
tomato puree

Yes, it took more than half of the morning to make it, and hey daughter! that's why I make pizza from scratch only on Sundays.
And all the editing took another lot of time, so Mum I don't know how you do this on a regular basis, and I think that's the last time I post a recipe like this.
I'm not venting, just saying ;)
